I've been debating whether or not I should post this recipe since I don't have any pictures for it. But then I realized the pancakes in question aren't that photogenic. Which is not to say they're not delicious and satisfying; evoking a strong feeling of stick-to-your-ribsness that can only come from an item so packed with whole-grains.
These are not yo granmama's pancakes, folks. These were made to satisfy the hunger of all those people out there looking to hearten up their hearts and bodies. I came up with recipe by trial and error; substituting the ingredients I had around for the ones in various recipes. Feel free to do the same, but keep in mind you may need to tweak the amount of milk or eggs if you start adding in tons of fruit or liquids like yogurt/maple syrup/etc.
Deirdre's Whole Grain Pancakes
Makes a whole bunch - enough for four people with leftovers to freeze
1 cup whole wheat flour
1/2 cup stone-ground cornmeal
1/2 cup wheat bran
2 teaspoons baking powder
1 teaspoon baking soda
A couple big pinches of salt
2 T honey
Maybe a T of oil if you remember
2 eggs
1-2 cups milk
Combine the dry ingredients and rub in the honey until the particles resemble crumbs. (If you decide to substitute other sweeteners don't bother with this. It's just my lazy way of distributing the honey evenly).
Combine the wet ingredients separately, then add to dry. Stir sparingly then allow to sit for about five minutes. (The whole wheat flour soaks up a lot of liquid, but it needs a couple minutes). Add more milk as needed to attain desired consistency.
Cook as you would for all other pancakes. I like to use cooking spray on a large nonstick pan, but that's what I've got. Feel free to lube up your pan with the desired fat and cook over med-high heat. These babies are substantial so you may need to lower the heat a bit once they have good color to ensure they cook through.
As I mentioned this recipe takes additions well. I've thrown in chocolate chips, bananas & almonds, dried fruits, etc. and they all taste great. I still prefer the plain topped with PB & J, but be sure to experiment to find your favorite variation.
